    2010 was an interesting vintage with a few hot spells and very little rain. The heat spikes did not endure and the cool nights offered respite for the vines allowing good accumulation of colour and flavour. Wines from this vintage show superb balance and intricacy of flavour.

    COLOUR

    Intense, concentrated, red centre turning into a ruby, red edge.

    NOSE

    Strong explosion of blackcurrent, mulberry, plums and chocolate flavours, backed by hints of vanilla and cigar box. Strong, black pepper and spice also present in the bouquet.

    PALATE

    Full bodied with a firm, ripe tannin structure backed by well-balanced acidity. Mid palate is full of dark fruit with a long and lingering finish.

    TECHNICAL DATA

    Blend: 50% Cabernet Sauvignon and 50% Cabernet Franc

    Analysis: ALc: 14.08 % TA: 5.6 g/L RS: 3.0 g/L Ph: 3.68

    Winemaker`s Notes

    The individual varieties were handpicked and sorted allowing only the best berries to be used for this wine. Selected blocks in the vineyard were allocated to be used in making the Big G. The separate batches underwent malolactic fermentation in 80% new and 20% old French oak barrels after which the wines were aged for a further 18 months in the same barrels. After ageing, only barrels with a certain level of quality were selected. The result, a full bodied, structured, and balanced Bordeaux Blend.

    Ageing:

    This full and balanced structure ensures excellent ageing potential of up to 10 years.

    FOOD PAIRING

    Beef entrecôte grilled over vine coals and served with tartiflette – finished with a fine béarnaise.

    Oven roasted quail dressed with Parma ham and stuffed with star anise and couscous – sauced liberally with Holden Manz Good Sport Cape Vintage 2009.

    Slow braised beef short ribs served with roasted parsnip puree enriched with butter, cream and a touch of nutmeg.

    COLOUR

    This wine has a deep ruby centre with a dark red edge.

    NOSE

    An intense nose filled with berry sensations that complement the magnificent black fruit and extract of pepper and spice notes.

    PALATE

    Very big on the palate with rich entry of ripe red ripe berry fruits. The middle palate is focussed and shows width with complexity and depth leading to a full dry finish. Pliable tannins are present and balanced combining well with the flavours of the sappy black fruit.

    Analysis: ALc: 13.5 % TA: 5.8 g/L RS: 3.0 g/L Ph: 3.48

    Winemaker’s Notes:

    The Cabernet Sauvignon for the 2010 vintage was selected from three distinct parcels with three varying soil types. This complexity in growing has resulted in wonderful intricacy in the wine. The grapes were picked at optimal ripeness to enable the correct balance between sugar and phenolics.

    Individual varieties were bunch and berry sorted, crushed and destalked to tank. After 3 days of cold soak at 10°C, alcoholic fermentation was initiated. The blend was made from selected barrels of the three blocks and was matured in barrique for 14 months.

    Classic beef bourguinon with a rich gravy and roasted onions.
    Filet mignon with a rich balsamic glaze with seasonal vegetables.
    Five-spice roasted duck breast with smoked mashed potatoes.

    HARVEST

    2012 was a cooler year than most and this shows in the delicate and persistent aromas found in our wines. The cropping levels were good and allowed long and slow maturation resulting in good flavour concentration as well as excellent sugar / acid balance in the grapes.

    COLOUR

    Pale, straw yellow colour.

    NOSE

    Strong, citrus fruit on the bouquet.

    PALATE

    As a result of the partial, malolactic fermentation, this is a wine with a naturally fresh mineral and crisp palate. Slightly buttery and fuller on the mid palate continues with a fresh, crisp and lingering after taste of citrus fruits.

    TECHNICAL DATA

    Analysis: ALc: 13.1% TA: 6.2 g/L RS: 1.4 g/L Ph: 3.33

    Winemaker’s Notes:

    Our Chardonnay was picked in the early morning and immediately whole bunch pressed. The resulting juices were sent to 50 % new and 50% old 225L French oak barrels for fermentation. A further 10 months ageing took place in these same barrels with only a small part of this wine undertaking malolactic fermentation. The result of this partial malolactic fermentation is a wine with a naturally fresh, mineral and crisp palate. No additional tartaric acid was used in making this wine. Good, healthy lees were used throughout the process of fermentation and ageing to obtain some buttery fullness in the mid palate. Barrels were very carefully battonaged to help with this mid palate development.

    FOOD PAIRING

    This wine is excellent with food such as salmon, seafood or poultry but also great for enjoying it with friends during the warmer, summer afternoons.

    HARVEST

    2009 produced shiraz grapes of immense spiciness and deep colour. Dry conditions coupled with cool nights helped to achieve perfect balance between all the components and resulted in an exceptional wine.

    COLOUR

    Deep, dark ruby red.

    NOSE

    The nose is intense showing flavours of fruit cake and sweet raisins. Hints of cassis and dark berry fruits.

    PALATE

    Smooth, soft entry with rich vanilla, coconut and raisin fruit exudes on the palate. This wine is rich and warm and has a long finish. With time, the balance between spirit and wine will harmonize creating a wonderfully complex offering.

    TECHNICAL DATA

    Analysis: ALc: 20.0% TA: 5.0 g/L RS: 88.8 g/L Ph: 3.75

    Winemaker’s Notes:

    The Shiraz for the 2009 vintage was chosen from a selected block. The vineyard was manicured to produce 6.5 tons/ha. Grapes were picked at optimal ripeness to get the correct balance between sugar and phenolics.

    The grapes were bunch and berry sorted, crushed and destalked to tank. After 1 day of cold soak at 15°C, alcoholic fermentation was started. Wine was pressed directly to tank and fortified with brandy spirit. The wine was transferred from tank to 5 year old 225L French oak barrels and matured for 19 months.

    When cellared correctly this wine will hold an even greater drinking experience. Look forward to opening this wine in the next 5-10 years or even longer.

    Chocolate and Hazelnut Torte.
    After a good meal enjoyed with a fine cigar and good friends.

    COLOUR

    Ruby red centre with a bright red edge.

    NOSE

    Plummy, ripe strawberries dominate a rich full nose with nuances of gentle spicy notes.

    PALATE

    Sweet ripe fruits, blackberries and red berries on entry support the overall palate of rich fruit and balanced acidity. All this combines to give the palate wonderful depth and a lingering appreciation of this super smooth elegant wine.

    The fruit tannins are ripe, rich and full offering a satisfying breadth to the mid palate, culminating in a great follow through of sweet fruit leading to a long finish.

    Analysis: ALc: 14.0% TA: 5.3 g/L RS: 3.0g/L Ph: 3.451

    Winemaker’s Notes:

    The Merlot for the 2010 vintage was chosen from selected sections within the different blocks on the Estate. These blocks were manicured to produce +/- 6 tons/ha and were picked at optimal ripeness to get the correct balance between sugar levels, acidity and phenolic maturity.

    Grapes were bunch and berry sorted, crushed and destalked to tank. After a short cold soaking at 10°C, alcoholic fermentation was started. The wine was pressed directly to barrels where malolactic fermentation was completed after which the wine matured in barrel for a further 12 months. Maturation is carried out in 20% new French oak and 80% 2nd and 3rd fill 225L barrels.

    FOOD PAIRING

    Venison medallions marinated in olive oil, orange zest, sage, pepper and juniper berries – pan fried and served with herb buttered potatoes.
    Rosemary grilled lamb chops prepared rare with cherry tomatoes warmed in a savoury balsamic reduction.
    Tea smoked duck breast with oven roasted pears and a blackberry jus.

    2012 was a cooler year than most and this shows in the delicate and persistent aromas found in our wines. The cropping levels were good and allowed us to dedicate some of the grapes from our estate to this rose.

    COLOUR

    Bright, beautiful salmon pink and peachy colour.

    NOSE

    Subtle nuances of fresh strawberries and cherries with hints of minerality coming through.

    PALATE

    The palate reflects the flavours of strawberries and dark cherries which follow through from the nose. Acidity and fruit is well balanced, leading to a fresh, lively, crisp and dry finish on the palate. The palate has depth and weight, which allows it to be either enjoyed on its own or to be paired with food.

    Analysis: ALc: 13.5% TA: 5.1 g/L RS: 2.6 g/L Ph: 3.53

    Winemaker’s Notes:

    This rosé is made from all four red grape varietals grown on the farm (Cabernet Sauvignon, Merlot, Shiraz and Cabernet Franc). The grapes are crushed, destalked and berry sorted by hand with the resulting juice left on the skins for just the right amount of time in order to achieve the salmon pink colour.

    2010 was a long, wet, late and challenging vintage. It was unusually cool and favoured wonderful elegance in our reds.

    COLOUR

    Bright red edge with a deep, dark centre.

    NOSE

    The nose reflects plum and sweet, dark, cherry fruits. Time spent in maturation has softened the nose which offers a whiff of coconut and a slight spiciness. The nose is forward with a medium intensity.

    PALATE

    This wine is clean and subtle on entry, showing ripe, soft, chewy tannins. A combination of sweet, dark, cherry fruits supported by the wood tannins, allows the mid-palate length and depth. The wine has a balanced finish that allows it to be enjoyed on its own or to be paired with food.

    TECHNICAL DATA

    Analysis: ALc: 14.0 % TA: 5.7 g/L RS: 3.0 g/L Ph: 3.58

    Winemaker’s Notes:

    The Shiraz for the 2010 vintage was chosen from selected rows inside a specific block. These blocks were manicured to produce 6 tons/ha. The grapes were picked at optimal ripeness to get the correct balance between sugar and phenolics.

    Grapes were bunch and berry sorted, crushed and destalked to tank. After 3 days of cold soak at 10°C, alcoholic fermentation was started. The wine was pressed directly to barrels where malolactic fermentation was completed. The wine was matured in barrel for 12 months utilizing 10% new French oak and 90% 2nd and 3rd fill 225L barrels.

    Springbok loin with a red berry compote.
    Spicy lamb cutlets with a fresh coriander and lentil salad.
    Oven roasted chicken with all the trimmings.

    HARVEST

    Harvest 2012 promises to be a much talked about vintage in years to come. Wines from 2012 have already developed great color and tannin structure with a close to ideal acid balance. This is mainly due to the fact that the grapes were allowed a long ripening period with few hot spells in February/March and comfortably cool nighttime temperatures. The use of irrigation was also kept to a minimum and in most blocks there was little irrigation for the entire season. This was as a direct result of good rains during the winter and the positive water retention characteristics of our soils.

    COLOUR

    This wine has a dark deep centre with a bright red edge.

    NOSE

    It is a beautiful collaboration of the typical characteristics of the two cultivars used. The nose is showing lots of berry flavors and black fruit originating from the Cabernet Sauvignon as well as upfront spice and dark cherries from the Shiraz.

    PALATE

    This wine has beautiful ripe, soft and chewy tannins with good balance and a soft and lingering finish. Spice and red berry flavors are prominent.

    Winemaker’s Notes:

    These grapes were selected from distinct parcels with varying soil types. This complexity in growing has resulted in a wonderful intricacy in the wine. The grapes were picked at optimal ripeness to enable the correct balance between sugar and phenolics. Individual varieties were bunch and berry sorted, crushed and destalked to tank. Fermentation was initiated immediately after crushing. Minimal additions were made to preserve the true cultivar characters of the grapes and to minimize the man-­‐made impact on the wine. After careful blending trials and numerous test tastings the final blend combined a variety of batches each contributing in its own unique way to make this a balanced, spicy and fruity wine.

    Slow cooked lamb stew with rich tomato herb and garlic sauce, haricots vert and grilled polenta.
